Tzatziki Sauce

Tzatziki is a delicious cucumber/yoghurt sauce that is served cold. It pairs well with a variety of meats and salads, warm breads or mezze. This recipe is a family favourite but be mindful of the garlic - you can add more or less to suit your tastes.

This sauce was great served with my Zucchini Fries.

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 6

150 g greek yoghurt
1/2 cucumber deseeded
1 or 2 cloves of garlic
1 tsp lemon juice
1/2 tsp salt
1 tbs olive oil

Grate the cucumber and place cucumber in a sieve over a bowl. Sprinkle over the salt and mix through. Allow it to drain for around an hour, until the water from the cucumber stops dripping.
In a bowl, combine the yoghurt, garlic and lemon juice and add the grated cucumber. Mix well to combine.

Cover and refrigerate overnight before serving with a drizzle of olive oil.

Can be served immediately but it tastes better if left overnight.
If you would like to modify this recipe you can also include 1 tsp of dried dill or mint.
If you don't have any lemon juice you can substitute this with white vinegar.
