Tzatziki is a cool cucumber dip that makes for an excellent condiment at a finger buffet for things like celery and carrots sticks, fresh prawns, or kebabs.
The other day I decided to make it, so bought some yoghurt from the supermarket. It was only then that I realised that I had forgotten a few key ingredients, such as lemon juice and mint.
Improvisation then kicked in, with a few substitute ingredients to make this Tzatiki with a Twist.

Makes: Approximately 450g
Ingredients
1 cucumber
350g soya yoghurt (or any plain flavour of choice)
2 tsp orange juice
2 cloves of garlic
2 tsp dried chives
½ tsp salt
Method
Peel and chop the cucumber.
Put the cucumber in a colander, sprinkle with salt, and leave for an hour.
Pat the cucumber down with kitchen roll to absorb all the moisture.
Mix the yoghurt, garlic, chives, cucumber, and orange juice together, then blitz roughly in a food processor.
