Vanilla Bean Shortbread

I found this recipe to be little difficult (I'm fairly certain I added too much butter), however, if you'd like to make biscuits that don't have eggs in them (either by personal preference or allergies), then this recipe may be an option for you.

Preparation Time: 30 minutes (plus 30 minutes refrigeration)
Cooking Time: 12 minutes
Serves: 22

Ingredients
125 gms butter, softened
1/2 cup icing sugar
1 vanilla bean
1 1/4 cups plain flour

Method
Place butter and sifted icing sugar in small bowl. Split vanilla bean; scrape seeds into a bowl. Or you could use vanilla bean paste instead (1 teaspoon of vanilla bean paste = 1 vanilla bean).

Beat with an electric mixer until light and fluffy; stir in sifted flour, in batches.

Knead dough on floured surface until smooth. Shape dough into a 25cm rectangular log. Enclose log in plastic wrap; refrigerate for about 30 minutes or until firm.

Preheat oven to 180 degrees. Grease oven trays; line with baking paper

Cut the log into 1cm slices; place slices about 2cm apart on trays. Bake about 12 minutes. Cool on trays.
