Ingredients For the vanilla cake: 3 eggs
6 tablespoons butter, softened
1 cup sugar
1/2 cup milk
1 1/2 cups self-raising flour, sifted
1 teaspoon vanilla extract
For decorating: Ready-made frosting - vanilla or chocolate (I used Betty Crocker's)
milk/dark and white chocolate
Method For the vanilla cake:
Preheat the oven to 180°C.
In a mixing bowl, beat eggs, butter and sugar until light and fluffy.
Add milk, flour and vanilla to the mixing bowl and beat with an electric mixer until combined and smooth in consistency.
Line a 22cm cake pan with baking paper or simply spray with oil. Pour the batter into the baking pan and bake for 20 minutes (depending on your oven, baking time may vary).
To test if cake is ready, insert a skewer into the cake and if it comes out clean, the cake is baked. If not, then bake for an extra 5 minutes and keep inserting the skewer until it comes out clean.
Let the cake cool for about 15 minutes
Making the cake pops:
Using a knife, slice the cake into pieces (and remove any hard edges).
Using your fingers, break-up the cake and crumb the cake into a large mixing bowl, until they represent breadcrumbs.
Scoop 2 tablespoon of the ready made frosting into the crumbed-up cake and mix until combined.
Melt the milk/dark and white chocolate in separate bowls, in the microwave. Leave aside.
Now, scoop a teaspoon/tablespoon (depending on how big or small you want them) of the cake mix and roll it into balls using your hands and place them on a tray lined with baking paper. Complete this step until cake mix has finished.
Dip the lollipop sticks into the desired chocolate and poke it into the cake balls.
Place them in the fridge and let it set for about 20 minutes.
Decorating the cake pops:
After the cake pops are set, melt more chocolate (if required) and dip the whole cake pops into the melted chocolate. Be sure to tap any excess chocolate off the cake pop and then poke them into a Styrofoam.
Decorate with sprinkles and you can drizzle chocolate over the the cake pops as well (i.e: if the cake pop is covered with milk chocolate, drizzle with white chocolate and vice versa).
After decorating, place them in the fridge to completely set before devouring the cake pops - 30 minutes.
