I love this recipe because itís quick, easy, produces very little washing up and is extremely versatile. The result is a great tasting snack thatís filling and healthy Ė depending on what you add in, of course!
2 cups SR flour
ĺ cup sugar
ĺ cup milk
Ĺ cup oil
Preheat a fan forced oven to 170įC.
Line a 12-hole muffin tin with paper muffin cases or squares of greaseproof baking paper.
Place all ingredients into a large bowl and mix gently with a wooden spoon until combined. Fold in any variations you are using (see below).
Divide batter evenly among the 12 holes of the prepared pan.
Bake for 20-25mins, or until risen and golden brown.
Donít limit yourself to these options Ė mix and match suggested fillings or get creative and add your own. Adding banana extends the pantry life of the muffins by preventing them from drying out too quickly. Be prepared to adjust cooking times when using moist ingredients.
1 finely chopped apple and ĺ cup sultanas
Apple, Ĺ cup chopped walnuts, 2 tsp cinnamon
2 small bananas, mashed and chopped walnuts
2 tbsp cocoa and 1 cup choc chips
1 cup chopped dates and chopped walnuts
Replace milk with Ĺ cup milk/ Ĺ orange juice, sultanas and orange rind.
