I am not actually a vegan as you would know from my previous recipes but I had made a vegan chocolate cake and I think the recipe is really good. So easy to make and easy to change to make different cake flavours so I just had to try it with bananas.
3 small brown bananas
1/2 teaspoon bicarbonate soda
1 teaspoon apple cider vinegar
1/2 teaspoon vanilla extract
3/4 cup brown sugar lightly packed
1 1/4 cups self raising flour
1/3 cup rice bran oil
1 cup warm water
In a small bowl add the bananas and mash well.
Next add the bicarbonate soda to the bananas and mix in.
Mash the bananas and add in bicarbonate soda
In a large mixing bowl add the vinegar, rice bran oil, vanilla, sugar and water.
Sift in the flour and mix on high speed for 1-2 minutes scraping down the sides.
Turn off the mixer and add in the banana and fold it through with a spatula.
Cake batter is mixed now to add the banana
Pour the cake mixture into a greased square tin and place it in the oven for 30 minutes.
Make sure cake batter is evenly spread out
Once the cake is out of the oven, leave it to cool for 10-15 minutes before removing from the cake tin.
To remove the cake the best way is to flip it upside down on to a square plate, as the cake is very light and breaks easily.
Next take another square plate and place it over the top, and gently flip the cake up the right way.
Allow the cake to cool completely and then serve. No icing or glaze required for this one.
