Vegan, Easy-bake Oat Cake

Dairy, sugar and cruelty-free living can be difficult to maintain, but it's 2016 and high time to get creative in the kitchen. As our modern lives pull on our time, a simple meal is what I crave, in spite of trying to live in a less-harmful, conscious way. In a bid to satisfy my more ethical approach to food, whilst still pulling at my creativity strings I whipped up this simple, fibrous oat cake that doubles as a breakfast bar too (time saving and delicious). Win.



Preparation Time: 5 minutes
Cooking Time: 45 minutes
Makes: 6 servings

Ingredients
5 overripe bananas
100g coconut sugar
5 squares of extra dark chocolate
100g coconut oil
300g rolled (flat, porridge), oats

Method
Puree the bananas in a blender and add to a bowl along with the coconut oil and oats.



Add the chocolate in roughly broken chunks - it doesn't need to be perfect.



Pour the mixture into a greased baking tin and place in the oven for 45 minutes at 180 degrees.

Remove from the oven and allow to cool for at least 20 minutes.



Slice and serve as you like - for breakfast, mid-morning snacks or as a healthy dessert.
