It may seem boring, but you can jazz up your porridge with just a few ingredients and turn your routine bowl of oats, into a delicious bowl of sunshine that powers you through your day.
Instead of oats, gluten alert (!), you should try quinoa; it is the only grain that contains all nine essential amino acids and it the ultimate food source for vegans/vegetarians/those interested in optimum health!
Wash the quinoa in cold water and put it into a pan of boiling water (100ml). When the quinoa grains begin to bubble away turn the heat down to a simmer and cover with a lid.
While the quinoa is cooking chop a whole banana and put it into a mug. Mush the banana and leave to one side.
After 15 minutes check the quinoa. The water should have evaporated, and the grain should have come out of the quinoa - see image. If it does not look like this add some more water and let it simmer with the lid off for 5 minutes.
If the quinoa is cooked add the banana and milk to the virtually dry quinoa and stir. Cover with a lid for 5 minutes and let the milk and banana work their magic.
If you're not feeling banana, how about a baked apple chopped up and dusted with cinnamon and nutmeg instead? This version works particularly well with almond milk. Enjoy.
