Lasagne is believed to be one of the earliest forms of pasta, with its history stemming both from Greek and Roman times and Medieval Europe. Today we mostly associate lasagne with minced meat, but it was a very different affair back in the Medieval period. Lasagne was typically eaten during Lent when Christians abstained from meat. Not only that, but lasagne could be sweet as well as savoury, as it was sometimes seasoned with cinnamon.
Going back to its roots, this is a vegetarian lasagne, full of delicious veg. I also gave it an crispy pasta topping.
