Vegetarian Omelette

Tasty cheesy quick and easy! Omelettes are high in protein, filling and great for a breakfast/brunch meal.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
Olive oil
Butter
4 Free Range Eggs
1 Tomato
Handful of Mushrooms
1/2 Cup grated Cheese
1/4 Cup Milk or Sour Cream
Salt and Pepper to taste

Method
Put a pan on medium heat and add the butter and olive oil.

Crack the eggs into a bowl and whisk a little with a fork. Add the milk/cream, salt and pepper and stir a little more.

When the pan is hot enough add the egg mixture.

Once the egg is half cooked, put the diced tomatoes, mushrooms and cheese on one half of the egg mixture.



When the cheese is melted, slide the empty half of egg on top of the other side to create a semi-circle.

Once egg is fully cooked, remove from pan and serve.
You can add almost anything to an omelette. Try feta, mushrooms, and roquette for something different.
