Vegie slice


Eaten hot or cold, this is a great little lunchbox recipe. Wrap it up and freeze it for up to a month.

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 8 servings

Ingredients
1 zucchini
1 medium carrot
1 cup baby spinach
1 brown onion
1 cup frozen peas
1 cup shredded tasty cheese
6 eggs
1 cup self-raising flour

Method
Preheat oven to 160°C (fan-forced).

Grease and line a 20cm x 30cm pan.

Chop onion; slice spinach; grate zucchini and carrot.


Vegie slice


Combine in a bowl with peas and cheese.


Vegie slice


Lightly beat eggs; add flour and mix until combined.

Add egg mixture to veggies and season; stir until combined.

Spoon evenly into pan; bake for 30 minutes or golden and until set.

Serve and enjoy.
