A traditional Balkan treat, ‘oblatne’ are a simple and easy way to do dessert. Make ahead and/or refrigerate; they’ll keep for up to a week. What’s more, you need only three ingredients and 20 minutes to make these treats.
Preparation Time: 20 minutes
Cooking Time: Nil. Standing time: 6 hours minimum
Makes: About 36 pieces
Ingredients
2 x 395g cans sweetened condensed milk
1 x 200g Tisa Wafers
3 x 185g pack walnuts
Method
Process walnuts in a food processor until relatively, but not too fine in texture.
Place in large bowl and stir in condensed milk until combined.
Select the wafer that is in the best condition and lay it down with the more obvious diamond-patterned side facing downward.
Spread walnut mixture over entire wafer. Don’t bother too much with the edges as you will have to trim these for the sake of presentation.
Lay another wafer, diamond-patterned side facing down and repeat previous step until all wafers are used up. Take care to finish with a sheet of wafer and not the mixture.
Cover wafer slab with a sheet of cling wrap and place something heavy on top to help wafers adhere to each other.
Tip: Place a wooden chopping board atop wafer slab and position heavy pots or a heavy pot filled with water on chopping board if you have nothing else.
Leave oblatne to set for an entire day or at least six hours.
Remove weights and cling wrap. Using only a sharp knife, trip the edges and cut oblatne into columns, then into desired shapes and sizes.
Enjoy immediately with tea or coffee or keep refrigerated until serving.
Tip: For correct pronunciation of 'oblatne' consider the following:
- 'Ob' as in 'obvious';
- 'lat' as in 'nut' with an 'L'; and
- 'ne' as in 'never again will I worry about which cakes to make when friends come for coffee'.
P.S. I really hope you enjoy these. My grandmother used to make them when I was a little girl, and they remain a solid favourite of mine to this day.
