1 cup whole barley grains
50 grams unsalted butter
2 tablespoons extra virgin olive oil
1 garlic clove
350 grams mushrooms
1/2 cup freshly chopped parsley
1/2 cup chopped mint leaves
1 tablespoon red wine vinegar
1 cup rocket leaves
1/2 cup grated parmesan cheese
Ingredients for Warm Winter Salad
Bring two cups of water to boil in a saucepan, and add the whole barley grains. Simmer for 55 minutes, so that the water soaks into the grains and makes them very soft and chewy. Drain away any excess liquid and set the warm grains aside for a moment.
Melt the butter in a frying pan and add the whole mushrooms and finely chopped garlic. Fry for five minutes.
Combine all the ingredients
Combine the warm barley grains, grilled mushrooms, grated parmesan cheese, extra virgin olive oil, red wine vinegar, chopped parsley, mint and rocket.
Toss all the ingredients together so that the dressing completely coats all the barley grains. Add salt and pepper to taste. Enjoy.
