Weet-Bix Crumbed Chicken Drumsticks

Everyone has a box of Weet-Bix in their cupboard and this recipe is another great use for this pantry staple. Weet-Bix crumbed chicken may sound slightly odd but it's a tasty, healthier way to crumb your chicken. The Weet-Bix provides the crispy coating you want when you're eating fried chicken, and the chicken stays succulent and juicy.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serves: 4

8 chicken drumsticks
8 Weet-Bix, crushed finely
4 eggs, whisked
2 cups plain flour
1 tsp chicken stock powder
salt and pepper, to taste
vegetable oil, for frying

Place the crushed Weet-Bix, stock powder, salt and pepper into a bowl and mix together.
Place the whisked egg into a bowl, and the flour into another bowl.

Coat a chicken drumstick in the flour, then dip it in the egg, then coat it in the Weet-Bix crumbs. Repeat until all the chicken is crumbed.

If you would like to double coat your chicken, repeat the process again.
Heat oil to medium in a large frying pan, add the chicken and cook for approximately 40 minutes. Turn the chicken regularly.
