Welsh Cakes

Welsh cakes are somewhere between a cake and a scone. Traditionally cooked on a griddle, but I have found they also taste nice when baked in the oven. It all depends on what kind of texture you prefer. Cook them on the stove for a crispy outside with a chewy middle, but bake them in the oven for a softer, lighter bite. Based on the brands I used, each Welsh cake is about 113 calories and can be and eaten plain or with butter.

Preparation Time: 15 minutes
Cooking Time: 4 minutes each on griddle or 10 minutes in the oven
Makes: 11 servings

Ingredients
225g self raising wholemeal flour
100g margarine
60g Truvia sweetener (or caster sugar if you prefer)
26g sultanas
1 egg
3 tbsp milk

Method



Rub the margarine into the flour to form a breadcrumb like consistency.
Mix in the sultanas and sweetener/sugar.



Beat the egg and milk together, then beat into the mixture.



Bring the dough together, then divide it into eleven balls.





Flatten the balls into patties and grill in a frying pan for two minutes on either side.



Alternatively, pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas, and bake them for 10 minutes.
