I peel and chop sweet potato into batons, pop in a baking tray, then drizzle with olive oil and sprinkle with thyme. Shake the baking tray to make sure it's all covered in the oil. Then bake in a preheated oven for about 50 mins. Perfect with roast potatoes and roast pork with crispy crackling.
Hi! I grate raw sweet potato with a zucchini, add 1 egg, 2-3 tablespoons flour (gluten free if you prefer), salt, pepper and any other herbs or seasoning you like (e.g. chopped parsley or chives). Mix thoroughly together and let it sit for 30 mins. or so, heat non-stick pan with good dash of olive oil or coconut oil; drop tablespoons of mixture into pan when oil is hot but not smoking! Turn heat down a little - they should be frying gently but not too low - turn over when nice and brown on one side. Add and heat more oil as you make patties. I serve with fresh green salad or cucumber, crushed garlic, salt mixed with Greek style yogurt for dipping is nice too...hope this helps!
My favourite is baked sweet potato. Wrap the sweet potato in foil and cook it in the oven until the centre is soft, you can add a bit of butter to it but there really is no need. I just add salt and pepper when I eat it.
The easiest way to cook sweet potatoes is to bake them and make into a puree-like texture or grill them. Rather than diluting the taste with spices, I find that sweet potatoes can maintain their soft texture and unique sweetness when grilled. They also taste wonderful when you make them into a puree. If you prefer something more crispy, you can try slicing them thinly and deep fry (with or without flour).
I like to replace white potatoes with sweet potatoes as the topping for a cottage pie. I also like to add a little grated cheese on top of the sweet potato cottage pie before placing it in the oven. Delicious:)
I ofen cook for someone with a carrot allergy and I find sweet potato is a great substitute. It's especially good in stirfrys because it soaks up flavors so well. The only trick is that it softens much more quickly than carrot so I either pre-cook it separately then add it in at the end or just add it to your recipe a little later.
One of my favorite Thanksgiving sweet potato dishes was sweet potatoes chopped for roasting into a pyrex roasting dish, sprinkled with some brown sugar, chopped walnuts, and chopped pineapple and finally topped with some small marshmallows. Bake in the oven until the marshmallows are just browned on top.

As most nurtuious part is the skin usually as in on many vegetables I have a vegetable brush using cold water and and scrub .
I have been making 🍠 soup adding a tin of rinsed Chick peas and the end during the cooking process adding ground Cumin adding chopped fresh parsley and sauted leeks the white part stir through chopped fresh Parsley towards the end also for a nutty flavour get some Peanut butter available from some health food shops as it has no added addivities .S&P to taste and use a good quality vegetable Stock they come in 1Litre boxes from the supermarket It's a very satisfying soup l purée it add the rinsed chickpeas leave them whole in the soup .
