You're in luck, I just put my favorite lunchbox recipe up today.
It's called 'San Choi Bao Salad' and it's basically Chinese lettuce cups without the fuss.
You simply make up a salad of fresh Asian vegetables and herbs and combine it with vermicelli noodles and lean kangaroo mince.
No need to heat it up, it lasts for several days so you can make it in big batches and best of all it's ridiculously healthy.
Why not make some sandwiches the day before? You could buy some lean cuts of cooked sliced meat and add some lettuce and tomatoes. For an extra treat, use sun dried tomatoes for extra flavour. If you are a vegetarian, then how about making a batch of fruity flap jacks or cereal bars at the weekend, and take one to work each day?
Cous cous salads are a healthy choice. You can just put them in a sealed tub and take a fork with you.
Roast some veggies that stay relatively crunchy i.e. pumpkin, sweet potato, parsnip and place in an airtight container. Whip up a lovely dressing of: Balsamic Vinegar of Modena, honey and olive oil and place in a small container. The next morning you fill another container with mixed salad. When at work you place veggies on top of your salad and pour the lovely dressing over! You can also grate parmesan cheese or sprinkle with seeds.. dishes that are rich in colour and flavour will make you feel more satisfied.
