White Chocolate Peanut Butter

Some of my friends who live in US have been raving about the "white chocolate wonderful" peanut butter made by PB&Co. I really want to try it, but it's not available in Australia. So I just had to make my own!

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 1 500g jar

2 cups (400g) dry roasted peanuts
125g white chocolate, broken into chunks
**my food processor is tiny (350ml capacity) so I had to make this in 2 batches


Place peanuts in food processor and pulse for a few minutes. First they will turn into ground peanuts.

Then a thick paste will be formed.

Keep pulsing for a few more minutes until it becomes smooth.

Melt the white chocolate in microwave, stirring every 30 seconds.

Pour the melted white chocolate in then process again until well combined.

Transfer into a jar and store at room temperature. This peanut butter is great as a spread for bread, dip for bananas/strawberries/apples and straight from the jar.

@Jamie0liversgirl let me know how you go! :) mine isn't really strong either but it took me around 10 minutes in total to make the peanut butter. if it's being stubborn you can always add a bit of canola oil to help. i haven't tried making almond butter before, will give it a go sometime soon!
OMG looks incredible! I will be making this next week! I have tried in the past to make almond butter and failed because my food processor isn't very strong - how fast is yours? I'm sure I could make peanut butter!
