White Chocolate Pudding

An indulgent pudding with hot creamy sauce.

Preparation Time: 30 minutes
Cooking Time: 35 minutes
Makes: 4 servings

Ingredients
75g white chocolate
65g plain white flour
65g margarine
2 tsp Truvia sweetener (or 130g caster sugar)
2 eggs
1 tsp vanilla extract
40g cocoa butter
125g single cream
25g butter

Method

Melt the chocolate over a pan of hot water.
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/375 ༠F/5 Gas.

Cream the margarine with sweetener/sugar and vanilla extract.

Gradually beat in the eggs with a handful of flour.

Fold in the remaining flour with the melted chocolate.

Pour the mixture into small pudding basin and tap it on the work surface to knock out the air bubbles.

Bake in the oven for 35 minutes.

Grate the cocoa butter and add to the cream and butter.

Heat at a low setting until full combined, and then pour over the pudding.
