These cookies taste as good as the ones I make with white flour although these ones are better for you in some ways. Regular white flour contains just 2.7g of fibre per 100g, where as wholemeal flour contains 8.8g of fibre per 100g.
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: Makes 15-20 cookies
Ingredients 180g unsalted butter
75 g castor sugar
395 g can of condensed milk
345 g wholemeal flour
250 g dark chocolate chips
Beat the butter and sugar on high speed about 2-3 minutes until creamy.
Add the condensed milk and continue to mix until all combined.
Add in the wholemeal flour and dark chocolate chips and mix until all combined.
Set aside the mixture for 10-15 minutes as it is much easier to roll out once the mixture has rested.
Rest the dough for 10-15 minutes
Preheat the oven to 180C or 160C fan forced.
Roll the mixture into balls of your desired size and lay out on to baking trays.
Leave space between each cookie as they will spread
Bake one tray at a time for 15 minutes.
Remove from the oven and continue to bake trays until all done.
Allow to cool then place in containers until ready to eat.
