Ingredients For the pancakes: ½ cup oat flour
1 tablespoon flax seeds, ground
1 teaspoon baking powder
¼ teaspoon sea salt
2 medium eggs
½ cup Greek yogurt
1 tablespoon sunflower oil
For the topping: 1 medium apple, sliced
1 tablespoon raisins
1 tablespoon sunflower seeds
Honey or maple syrup, optional
In a large bowl, stir together the oat flour, flax seeds, baking powder and salt.
In another small bowl, combine the eggs and yogurt.
Add the egg mixture to the flour mixture and mix them together.
Heat a large skillet over medium heat and add the oil to the skillet. For each pancake, pour about 2 tablespoons of the batter into skillet. Cook the pancakes for about 2 minutes on each side.
Top the pancakes with the apples. Sprinkle the raisins and sunflower seeds over the pancakes. If desired, add some honey or maple syrup to the meal.
