Zucchini and Olive Salad

Zucchini is a vegetable that can be enjoyed all year round with its sweet overtones combining perfectly in cakes, breads, stir-fries, curries, pasta and salads.

This extremely simple but wickedly delicious summer or winter salad is not only visually enticing but will delight across the sensory palate with itís fragrant and fresh flavours. This Zucchini and Olive Salad has just the right balance of flavours, the sweetness from the zucchini and basil marrying perfectly with the slight saltiness of the olives and the fresh and clean taste of the lemon juice.

Delight the sensory palate with this simple but wickedly delicious Zucchini and Olive Salad.


Preparation Time: 5 minutes
Cooking Time: 1 minute
Makes: 2 entree servings

Ingredients
1 Small Zucchini
1/2 Cup Kalamata Olives
1 Teaspoon Lemon Zest
Juice of 1 Lemon
1/2 Cup Shredded Basil
Olive Oil

Method
Bring a small saucepan of salted water to the boil.

Thinly slice zucchini into rounds.

Thinly slice the zucchini into rounds and blanch in salted boiling water for a minute.


Blanch zucchini for one minute.

Remove the zucchini, drain and wash under cold running water.

Remove the Zucchini, drain and refresh the Zucchini under cold running water.


Arrange the zucchini on a serving plate.

Finely grate lemon zest evenly over the zucchini.

Dice the Kalamata olives and sprinkle on top of the zucchini.

Just before serving, drizzle a small amount of extra Virgin olive oil and the lemon juice over the zucchini.

Garnish with some shredded basil leaves.
