My family have pizza once a fortnight, we love to try various toppings and this is a new favourite of ours. The best thing is, you can start making it and have it on the table ready to eat within 30 minutes.
Ingredients 1 zucchini, sliced thinly
1 potato, sliced thinly
1/2 capsicum, sliced
1/2 tin crushed tomatoes
1/2 onion, diced (optional)
75 g grated cheese
1 3/4 cups SR flour
1/4 cup oil
2/3 cup boiling water
salt and pepper, to season.
Preheat oven to 200C and prepare two pizza trays.
Combine the flour, oil and boiling water in a bowl, mix until a dough is formed. Lightly flour a clean surface and knead the dough on the floured surface until just combined. Roll the dough into two pizza shapes.
Using your finger tips, gently press dimples into the pizza base before baking for 5 minutes.
Spread 1/4 tin of crushed tomatoes across the pizza base leaving a 1cm border.
Place the onion, potato, zucchini, capsicum and cheese on top of the crushed tomatoes. Season with salt and pepper.
Bake for 15 minutes until the base is cooked through and the cheese has melted.
