Everyone loves brownies - right? But some of us tend to worry about the calories. No need to worry any longer - here's a recipe for brownies that is a little healthier than normal but still delicious. With no butter or eggs, they are vegan too.
Ingredients 2 cups of finely grated zucchini
1/2 cup of stewed apple or apple sauce
2 medium bananas mashed
1 cup of sugar - I used raw sugar but you can use normal white sugar if preferred
2 tsp of vanilla extract
2 cups of plain flour
1 and 1/2 tsp of baking soda
1/2 tsp of salt
1/2 cup of cacao powder or cocoa powder
1/2 cup of walnut pieces chopped
Ingredients for zucchini brownies
Preheat oven to 180deg C (170deg C for fan-forced oven). Grease a baking dish approx. 20cm x 30cm with spray oil and line with baking paper.
In a large mixing bowl, mix together the apple, bananas and sugar.Then mix in the cacao and vanilla.
Add in the zucchini, baking soda and salt and mix. Finally add in the flour and walnuts and mix together.
The apple, banana and cacao mixture followed by the zucchini, flour and walnuts.
Spread evenly into your prepared dish and bake for 25 minutes. The brownies should spring back when gently touched.

Let brownies cool slightly before turning out onto board and cutting into squares.

These brownies are not a heavy chocolate-fudgy consistency. They are more cake-like however they are very light and incredibly moist.
If you prefer a stronger chocolate flavour and maybe a little sweeter, fold through some chocolate pieces with the other ingredients.
One thing I should have mentioned in the recipe was that once you have grated your zucchini, you will probably find it quite wet, so squeeze out as much of the moisture as possible before mixing with the other ingredients. Otherwise the mixture may be too wet.
