Zucchini Carpaccio

One of my favourite recipes for a light summer dinner or tangy accompaniment a seared piece of fish.

Super healthy and surprisingly delicious for such a simple recipe. Trick the family into having instead of pasta occasionally, or mix through the standard bolognese for an extra vegetable hit!



Preparation Time: 5 minutes
Marinade Time: 20 minutes
Makes: 4 servings

Ingredients
1 kg zucchini (I like to use a mix but not necessary)
cracked black pepper

Dressing
1 tbsp wholegrain mustard
1 1/2 tbsp extra virgin olive oil
1 lemon, zest and juice of

Method
Using a wide grater and/ or peeler, cut the zucchini into long, fine strips.



Combine dressing ingredients in a small jug and mix thoroughly.



Pour dressing over the zucchini, tossing to combine well; then cover and refrigerate for at least 20 minutes to marinade.



Sprinkle with slivered almonds and season with cracked black pepper. Enjoy!
