Ingredients 4 zucchini
75 g plain flour
1 egg, whisked
1 cup fresh breadcrumbs
oil to fry
Cut each zucchini into desired chip size, I like to cut mine in half, and then each half into 4 pieces so you get 8 chips from each zucchini.
Coat the zucchini slices with flour. I like to place the flour into a freezer bag with the zucchini's and toss until all pieces are coated.
Place the whisked egg and breadcrumbs into two separate bowls side by side. Take each zucchini chip and dip into the egg mixture before tossing in the breadcrumbs. You will need to press the crumbs onto the zucchini lightly.
In batches, pan fry in oil approx 1cm deep over a medium to high heat for 1-2 mins per side until golden brown on both sides. Drain on paper towel after frying.
Sprinkle with salt and serve
You could change this recipe by adding seasonings or even cheese to the breadcrumb mix
