Ingredients 1 small to medium zucchini, grated
1 large onion, finely diced
3 rashers bacon, diced
1 cup cheese, grated
1 cup self-raising flour
¼ cup vegetable oil
5 eggs (4 eggs if using extra large eggs)
Preheat oven to 180c.
Combine zucchini, cheese, onion, and bacon in a large bowl.
Stir in the self-raising flour, followed by the oil and lightly beaten eggs. Stir well.
Place in a lined baking dish or disposable foil tray and bake for approximately 40 minutes or until top is firm and golden brown.
The zucchini slice can be frozen. Once it is cooked and cooled, slice into individual serves and wrap separately in cling film or ziplock bags and place in the freezer. Simply defrost in the microwave for a couple of minutes on high for a hot snack.
This slice is delicious served hot or cold with a side of salad or steamed vegetables.
