Zucchini Stuffed with Goat’s Cheese and Oregano

I absolutely love this dish for several reasons:

1)It’s so simple to make
2) It takes only 15 minutes to prepare
3) It’s versatile – you can use eggplant, peppers or cucumbers instead of zucchinis
4) It tastes delicious
5) It looks spectacular, kind of like you’ve slaved over a hot stove for hours. Your family and friends are sure to be impressed.

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients
1 egg
3 tbsp breadcrumbs
2 tbsp dried oregano
1 tbsp fresh basil
3 spring onions
4 zucchinis
400g beef mince
150g goat’s cheese
4 tbsp olive oil
500ml tomato juice (or crushed tomatoes, blended)
1 tbsp salt
2 tbsp black pepper
1 tbsp sugar

Method

Preheat fan force oven to 180°C (350°F).

Place breadcrumbs into a bowl.

Chop basil into strips and add to breadcrumbs.

Chop spring onions and combine with breadcrumbs.

Add oregano, salt and pepper, egg, mince and cheese.

Stir mixture until well combined, but be careful not to knead it.

Chop off the ends of the zucchinis and cut them in half lengthways.

Cut off some of the curved base so the zucchinis will be more stable once placed in dish.

Taking care not to tear the bottoms of the zucchinis, scoop out their insides using a teaspoon.

Fill the zucchini halves with the mixture.

Grease an ovenproof dish and transfer the zucchinis into said dish.

Put dish into oven and bake zucchinis for 15 minutes.

Pull out dish and add a touch of water.

Baste zucchinis with the juice produced.

Return to oven for a further 15 minutes.

In the meantime, season the tomato juice with the sugar, and some salt, pepper and oregano.

Hint: You do not need to add salt at this stage; it is entirely up to you. In fact, a good way to reduce the salt content of any dish is to wait until serving it before adding any salt at all.

Pour tomato mixture over zucchinis and return to oven for a further 10 minutes.

Serve with grated Parmesan, and enjoy.
