Creamy, melt-in-your mouth chocolate and peanut clusters that are easy to make, are great gifts and utterly delicious.
Preparation Time: 20 minutes
Cooking Time: 3 minutes
Makes: 9 servings
Ingredients
1 cup of raw peanuts
18 squares of dark chocolate
1/2 tsp good quality coarse sea salt
Method
Place the raw peanuts onto a baking tray and cook in a 180C oven for 20 minutes. Give them a shake every 5 minutes or so.
Once cooked remove the skins. I have found the easiest way is to pour them into a tea towel and rub them! Pick out the exposed peanuts and discard the skin.
Place cooked peanuts in the bottom of a non stick mini muffin tray and top with 2 pieces of chocolate. I used about 8-10 peanuts for each round.
Pop into the hot oven for about 3 minutes.
Remove and give each cluster a stir. Place in the fridge or freezer until just set. The freezer will take about 10 minutes, the fridge about 1 hour.
Whilst still a little wet sprinkle with sea salt then allow to set completely.
Remove each cluster from its mold and enjoy this beautiful treat.
I have used peanuts and dark chocolate but any nut or chocolate can be used!
You can also used cooked nuts which will make these a lot faster to make!
