
Peanut butter mousse with chocolate chips and crushed peanuts
Quick, easy, tasty and only three ingredients. This peanut butter mousse is a simple but moorish sweet treat. It is also egg, dairy and gluten free.
Preparation Time: 5 minutes
Cooking Time: 15 minutes to set
Serves: 2
Ingredients
2 large frozen bananas
2 tbsp coconut oil
4 tbsp smooth peanut butter
Chocolate chips, to serve (optional)
Crushed peanuts, to serve (optional)
Method
Break the frozen bananas into chunks and place into a bowl.

Small to medium chunks are good for blending so the bananas do not defrost
Blend or beat until the bananas are smooth in consistency.
Add the coconut oil to the bananas and blend or beat for 1 minute to combine.
Add the peanut butter and blend until combined.

I use smooth peanut butter but you can use crunchy peanut butter for extra texture
Place in serving bowls and refrigerate for 15 minutes to set.
Serve alone or sprinkle with chocolate chips and crushed peanuts.

The mousse may have some air pockets which will smooth out when serving
