Chilli is a great meal if you're cooking for a group, or if you want extra portions to freeze. This chilli is not too spicy, it has all the flavour you want from the spices, with just enough of a kick to warm you up.

Makes: 4 servings
Ingredients
1 large onion
A little oil for frying
2 cloves of crushed garlic
1 tsp paprika
1 tsp hot chilli powder
1 tsp ground cumin
500g lean beef mince
400g tinned tomatoes
1 beef stock cube
150ml water
Salt and pepper
1 can of tinned kidney beans
Method
Dice the onion and sauté until just starting to soften.
Add in the garlic and spices, then fry for another minute until fragrant.
Next add the mince and cook until browned, breaking up the mince as it cooks.
Reduce the heat and add the tomatoes, stock cube and water.
Season with salt and pepper.
Simmer for at least 20 minutes but it can simmer on if you're not ready to eat yet.
Mix through the kidney beans and heat through for a further 10 minutes.
Serve with rice, grated cheese and some sour cream.
