4 Fruit Tropical Cake

Although it's the middle of Winter and cold outside, you can always bring a little summer back in the kitchen. Here is a recipe for a 4 fruit tropical cake, everyone's favourite: mango, blueberry, pineapple and passionfruit! When summer fruit are in season you can always substitute for fresh fruit which will definitely tastes equally and even more delicious!

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Makes: 4 servings

80g unsalted butter, softened
3/4 cup caster sugar
1/2 tsp vanilla essence
1 egg
3/4 cup self raising flour
1/3 cup buttermilk
100g frozen blueberries
50g mango slices
50g pineapple slices
Passionfruit pulp to serve

Cinnamon Topping
2 tbsp caster sugar
1 tsp cinnamon

Preheat the oven to 180°C.

Grease and line a loag pan with the sides overhanging at least 2 centimetres.

Beat the butter, sugar and vanilla together until light and fluffy.

Add in the egg and beat well.

Sift in half the flour into the butter mixture.

Add in half the buttermilk.

Add the remaining flour and buttermilk in alternatively until all used up.

Combine the ingredients until smooth.

Cut the mangoes and pineapple slices into small portions.

Gently fold in the mangoes, pineapple and blueberries.

Spoon the mixture into the prepared pan.

Combine the sugar and cinnamon in a bowl

Sprinkle half the cinnamon sugar over the cake.

Bake for 40 minutes or golden.

Remove from the oven and transfer onto a wire rack.

Sprinkle with the remaining cinnamon sugar and drizzle with passionfruit pulp.
