These addictive, delicious and quick to make Italian macaroons are a great treat or gift. They taste scrumptious as is, or can be jazzed up with blanched almonds or glazed cherries pushed into the centre before baking.

They are gluten and lactose free. The only problem is trying to stop at one!

I stir from the inside out to prevent lumps forming

Roll 1 tablespoon of the dough into balls and place them on a baking tray.

Amaretti Cookies (Italian Macaroons)
Evenly spread the balls on the tray

Bake for 15 minutes or until slightly golden.
Cool on wire racks and dust with icing sugar before serving.
