4 Ingredient Amaretti Cookies
These addictive, delicious and quick to make Italian macaroons are a great treat or gift. They taste scrumptious as is, or can be jazzed up with blanched almonds or glazed cherries pushed into the centre before baking.
They are gluten and lactose free. The only problem is trying to stop at one!

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 24 - 26 cookies
Ingredients
2 cups almond meal
3/4 cup caster sugar
2 egg whites
2 tsp vanilla extract
Optional extras
Caster sugar, to dust
Blanched almonds
Glazed cherries
Method
Preheat oven to 160 degrees. Line 2 baking trays with baking paper.
Lightly beat the egg white and vanilla extract, set aside.
Combine the almond meal and sugar in a bowl. Make a well in the centre, add the egg mixture and stir to combine.

Roll 1 tablespoon of the dough into balls and place them on a baking tray.

Bake for 15 minutes or until slightly golden.
Cool on wire racks and dust with icing sugar before serving.
