5-Ingredient Ratatouille

I made this ratatouille for a quick and healthy lunch one day. Usually ratatouille contains a vast amount of vegetables but I kept this recipe really simplistic to make it quicker to prepare, but it still retains a distinct ratatouille flavour.



Chickpea ratatouille


Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
1 onion
1 eggplant
1 tsp dried thyme leaves
350ml passata/tomato puree
1 cup cooked chickpeas
Optional: 1 tbs olive oil (if not using a non-stick pan), parsley for garnish, salt & pepper to taste



Chickpea ratatouille


Method
Finely dice the onion and eggplant.
Fry in a non-stick saucepan over a medium heat, stirring occasionally, for about 7 minutes, or until they start to brown.
Add thyme, tomato and chickpeas.
Cover, bring to the boil then simmer for another 10 minutes, stirring occassionally.
When the eggplant is soft and mushy, remove from the heat.
Serving suggestions: with rice, pasta, polenta or quinoa, and garnish with fresh parsley.
