5Ingredient Ratatouille

I made this ratatouille for a quick and healthy lunch one day. Usually ratatouille contains a vast amount of vegetables but I kept this recipe really simplistic to make it quicker to prepare, but it still retains a distinct ratatouille flavour.



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
1 onion
1 eggplant
1 tsp dried thyme leaves
350ml passata/tomato puree
1 cup cooked chickpeas
Optional: 1 tbs olive oil (if not using a non-stick pan), parsley for garnish, salt & pepper to taste



Method
  • Finely dice the onion and eggplant.
  • Fry in a non-stick saucepan over a medium heat, stirring occasionally, for about 7 minutes, or until they start to brown.
  • Add thyme, tomato and chickpeas.
  • Cover, bring to the boil then simmer for another 10 minutes, stirring occassionally.
  • When the eggplant is soft and mushy, remove from the heat.
  • Serving suggestions: with rice, pasta, polenta or quinoa, and garnish with fresh parsley.
