5 Minute Pancakes Dairy Free Egg Free
These pancakes are super fluffy and delicious and only take minutes to make. The mixture comes together very quickly and there is no need to let it sit.
Mix up the milks and flours to suit your taste/what you have in the cupboard.
This base is simple so can have berries, cacao, protein powder or cinnamon added to it without a flavor clash.

Ingredients
1 cup flour (whichever kind you like)
1 tablespoon sugar (I used coconut sugar)
1 tablespoons baking powder

1 cup plant based milk
2 tablespoons vegetable oil
Banana and maple syrup to serve
Method
Combine the dry ingredients (flour, coconut sugar, baking powder and salt) in a bowl.
Add the plant based milk (I used almond) and vegetable oil to the mixture and stir until smooth.
Place a nonstick pan over a medium heat. Once hot spoon one pancakes' worth of the mixture into the pan.
Once the pancake starts to bubble and slightly stiffen flip!
Repeat until the mixture is gone. Top with berries, chocolate, peanut butter or, as I have here, banana coins and maple syrup.
Makes six-eight pancakes.
