This refreshing cucumber pickles are great to be eaten as side salad or to be served with fried rice, fried noodles or satay.

Makes: 4 servings
Ingredients
200g fresh cucumber
1 red chilli
1 red shallot
200ml warm water
4 tbsp sugar
2 tsp white vinegar
1 tsp salt
Method
Cut the cucumber into quarters lengthwise. Cut off the seeds. Dice the cucumber.
Peel and thinly slice the shallot.
In a bowl, mix the sugar, salt, vinegar and water until the sugar and salt have dissolved.
Add in the diced cucumber, chopped chilli and sliced shallot.
Cover and keep in the fridge for at least 15 minutes before serving.
