Acar Indonesian Pickled Cucumber

This refreshing cucumber pickles are great to be eaten as side salad or to be served with fried rice, fried noodles or satay.



Preparation Time: 5 minutes
Cooking Time: 1 minutes
Makes: 4 servings

Ingredients
200g fresh cucumber
1 red chilli
1 red shallot
200ml warm water
4 tbsp sugar
2 tsp white vinegar
1 tsp salt

Method
  • Cut the cucumber into quarters lengthwise. Cut off the seeds. Dice the cucumber.

  • Chopped the chilli.

  • Peel and thinly slice the shallot.

  • In a bowl, mix the sugar, salt, vinegar and water until the sugar and salt have dissolved.

  • Add in the diced cucumber, chopped chilli and sliced shallot.

  • Cover and keep in the fridge for at least 15 minutes before serving.
