Aduki Bean Salad
Aduki beans are a 'superfood', dense in protein and fibre, and they're great for your digestion. Here's a great salad that's quick, tasty, and vegan friendly.

Makes: 1 servings
Ingredients
50g of aduki beans
1 tblsp pomegranate seeds
A bunch of spinach
A bunch of chicory
Half a vegetable stock cube
1 tsp coconut oil
A small bunch of parsley
A small bunch of coriander
Method
Boil aduki beans with half a vegetable stock cube (no more than half because it will be too salty), for 30 minutes.
Chop the chicory leaves, spinach, and coriander.
After 30 minutes toss the beans, leaves, and pomegranate seeds, in a dressing of lemon juice, vinegar, coconut and olive oil.
Serve and garnish with a few pomegranate seeds for prettiness, yum.
