African Nourish Bowl with Kekewot

My amazing lunch bowl today featuring greens, brown rice, tomatoes and homemade keke-wot and hummus topped with spring onion. Spicy keke-wot is one of my favourite African dishes.



Preparation Time: 2 hours
Cooking Time: 40 minutes
Serves: 4

Ingredients
Two big handfuls of mixed leaves
Two tomatoes
2 cups of cooked brown rice
1 spring onion
4 tbsp of homemade [link http://recipeyum.com.au/4-ingredient-hummus/ hummus]

Keke-wot
1 -2 tbsp coconut oil
ΒΌ cup cooking oil
1 large onion diced
2 teaspoons minced garlic
1/2 tbsp fresh minced ginger
1 tbsp coriander or cumin
1-2 teaspoons smoked paprika
1 cup dry lentils soaked for 2 hours
1 Tablespoons Tomato paste
2 cups or more Vegetable stock
2 tablespoons or more chopped parsley/Cilantro
Salt and Pepper to taste.



Method
  • Heat up a large saucepan with oils, add the onions, garlic, ginger, cumin and smoked paprika, stir occasionally for about 2-3 minutes until onions are translucent.

  • Add your soaked lentils and tomato paste, stir for a few minutes more minutes. Add stock.

  • Bring to a boil and let it simmer until sauce thickens, will take about 30 minutes.

  • Throw in the parsley and season.
  • To assemble layer each bowl with leaves, the stew, brown rice, chopped tomatoes and top with [link http://recipeyum.com.au/4-ingredient-hummus/ hummus] and snipped spring onion.
  • Enjoy hot or cold.
