I made this bread and butter pudding out of leftovers from Christmas, which included some stale stollen and brandy sauce. Some festive spices and fruit also helps get over the post holiday blues.

Serves: 4
Ingredients
6 slices
homemade stollen (or shop bought)
200ml brandy sauce
500ml almond milk
2 apricots
1 satsuma
1 tsp nutmeg
1 tsp cinnamon
1 tbsp Truvia sweetener (or 50g caster sugar)
1 tbsp vanilla extract
3 tbsp butter
3 eggs
Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas.
Butter the stollen and place in a roasting dish.
Slice/peel the fruit and scatter over the stollen.
Beat together the remaining ingredients and pour over the stollen.
