Alfalfa Sprout Salad
Possibly the quickest salad you can make, and bursting with cancer-fighting ingredients like vitamin K and are generally a good source of protein and fibre.

Makes: 1 servings
Ingredients
100g of alfalfa sprouts
2 tblsp olive oil
20g Goat's cheese
A handful of spinach
Black pepper
Method
Wash the sprouts and spinach and arrange in the middle of a plate in this order: spinach, alfalfa sprouts.
Dress in olive oil drizzling over the salad.
Crumble over the Goat's cheese from a height and season with black pepper.
