Almond and Cottage Cheese Filled Crepes with Blueberry and Orange Sauce

This is a very filling brunch and the mixture of almond, blueberry and orange is a very nice one, as it has tart with sweet plus the crunch of almonds.

This is #20 in my series of brunch recipes, and you can make a large part of this recipe the day before.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Serves: 3

Ingredients
For the crepes
2 eggs
½ cup flour
½ cup milk
½ tbsp coconut sugar
Bit of almond essence

For the filling
225 g cottage cheese
1 egg yolk
1½ tbsp coconut sugar
½ tbsp orange zest
¼ cup almonds, slivered or blanched

For the blueberry topping
1½ tbsp corn flour
Just under half a cup orange juice
1 cup blueberries
Almonds, to garnish

Method
For the crepes
  • Mix all the ingredients until smooth.


  • Spray a small pan with oil and heat until a medium heat is achieved.

  • Cut some sheets of baking paper about the size of each pancake.

  • Add about 3 tbsp of the batter to the pan, tilting it to make it quite thin.

  • Cook the crepe till the bottom begins to brown - about a minute.
  • I have flipped the crepe for the photo do not worry if they are not even


  • Put them on baking paper with the cooked side up.

  • Repeat with the remaining batter, layering the crepes with the baking paper.

  • For the filling
  • Mix the cottage cheese, eggs yolks, sugar and orange zest, until well mixed.

  • Add the almonds and mix.


  • For the blueberry topping
  • Combine the sugar and the corn flour in a saucepan.

  • Add the orange juice and blueberries.


  • Cook this till it boils, stirring all the time until it has thickened - this should only be about a minute.

  • To serve
  • Put a few tbsp of filling onto each crepe.


  • Roll them and put them on a tray on baking paper.

  • At this stage, you can put them in the fridge till you need them.

  • Preheat the oven to about 150°/130° fan forced.

  • Bake the filled crepes until they are hot - if taken from the fridge, this will take about 10 - 15 minutes, or only about 5 if they are still warm from cooking.


  • Put on serving plates, and cover with the blueberry topping,

  • Add the extra almonds for garnish, and serve.

  • You could also add some sour cream though I did not as didn't want more calories.
