Almond Apple Cake

This almond apple cake is made with almond meal and apples as main ingredients. It is moist and rich, not overly sweet and slightly dense. It is easy to put together and perfect for teatime.

Preparation Time: 10 minutes
Cooking Time: 40-45 minutes
Makes: 8 servings

100g almond meal
100g unsalted butter, softened, plus extra for greasing cake pan
3-4 granny smith apples, peeled and cored
90g caster sugar
2 eggs
1½ tablespoons rice flour
1½ tablespoons cornflour
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
Handful of flaked almonds
1 tablespoon apricot jam, mixed with some warm water, for glazing

Preheat oven to 170°C, fan-forced. Grease a 20cm round tin.
Cut 1 apple into thin slices and reserve. Grate remaining apples to measure 1 1/4 cups.
Cream the butter and sugar in a large bowl until pale and creamy.
Add the eggs one at a time, beating well after each addition.
Sift flours, baking powder and spices together over a bowl and fold into the creamed mix. Fold in almond meal and combine.
Stir in the vanilla and grated apple.
Spread cake batter into prepared cake pan.
Arrange apple slices over together with a handful of flaked almonds.
Bake in oven for 40-45 minutes or until a skewer comes out clean when inserted in the center.
Take out cake from the oven and glaze with jam.
Let cool slightly in pan before removing to cool completely on wire rack.
Served with icecream or enjoy as is with a nice cup of tea.

The apples can be replaced with carrots to make a carrot cake.
