Almond Milk Almond Pudding

Almond milk is a nutritious alternative to dairy milk, and it is something I have been buying for quite a while now. I only, just noticed, however, that the almond milk we buy from the shops can contain very little almonds - about 2%.

If you want your almond milk to be actually made from 100% almonds, then the best way to do it is to make it yourself.

Once you have finished making the milk you will then be leftover with damp almond meal. Don't throw it away, that would be a waste. With this recipe you can turn it into a delicious pudding.

Preparation Time: 12 hours 20 minutes
Cooking Time: N/A (milk) 50 minutes (pudding)
Makes: 2-4 servings each

Ingredients
200g whole almonds
1 L water
60g clear honey
20g agave nectar

Method
  • Soak the almonds in water for twelve hours.


  • Put the almonds and water in a blender and blitz.


  • Strain the milk with a sieve and then serve in glasses.



  • Pre-heat oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375 & #3872 ;F/5 Gas.



  • To make the pudding, mix the leftover almond meal with honey and agave nectar.


  • Pour the ingredients into a baking dish and bake in the oven for fifty minutes.
