Four simple ingredients make these tasty biscuits. Crisp on the outside, but chewy on the inside, Amaretti has a lovely blend of textures.

Ingredients
125g ground almonds
125g icing sugar
1tbsp Truvia sweetener (or 70g caster sugar)
2 eggs
Method
Pre-heat oven to 150 ༠C/ 130 ༠C fan/300 ༠F/2 Gas.
Mix the ground almonds and icing sugar together.
Separate the eggs and whisk the whites to soft peaks with the sweetener/sugar.
Fold the whites into the almond mix.
Roll the paste into balls and bake in the oven.
