Amaretti Cookies

Amaretti cookies are deliciously chewy little almond biscuits that my family love. They're a great way to use up leftover egg whites.

Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 30

3 egg whites
280 g almond meal
280 g caster sugar
1/4 tsp vanilla extract
30 ml Amaretto liqueur (optional)
3-4 tbs caster sugar, additional for rolling
3-4 tbs icing sugar, for rolling

Preheat oven to 170C and line two baking sheets with baking paper.
Whisk the egg whites until they form stiff peaks.

Fold in the almond meal, sugar, vanilla extract and Amaretto liqueur. The mixture should now resemble a thick, sticky paste that can form a ball in your hand.

Place the caster sugar and icing sugar for rolling onto two separate plates.
Roll walnut sized balls of cookie mixture between your hands. Roll each ball into the sugar and then roll them into the icing sugar. Place onto the baking tray leaving room to expand during baking.

Gently flatten the biscuits slightly before placing in the oven for 15 minutes.
Leave cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
