Amazing Lamingtons

A homemade Lamington is a thing of beauty. Give this one a try. You will be glad that you did !

For a fun variation I sometimes roll these in hundreds and thousands instead of coconut. The kids love it.



Preparation Time: 30 minutes
Cooking Time: 30 minutes
Serves: 6

Ingredients
For the Cake:
125g Butter
1 Cup Caster Sugar
½ Teaspoon Vanilla Extract
3 Eggs
1 ¾ cups of SR Flour – Sifted
½ cup of Milk

For the Icing:
3 ½ cups of icing sugar mixture
¼ cups cocoa powder
1 tablespoon butter
½ cup of boiling water

Additional:
2 Cups of Desiccated Coconut

Method
  • Preheat oven to 180 degrees (160 fan forced).
  • Grease and flour a 20x30cm lamington tray.
  • Beat butter, sugar & vanilla until light and fluffy.
  • Add eggs one at a time.
  • Sift half of the flour over the butter mix and stir.
  • Add half of the milk and stir.
  • Repeat with remaining flour and milk
  • Bake for 30 minutes or until a lovely golden brown. *Leave to cool. If you can leave it overnight in the fridge, that is perfect!
  • Make the icing. Sift icing sugar and cocoa. Add the butter and boiling water and stir well.


  • For the assembly, cut the cake into whatever size or shape you like.


  • Coat in a generous layer of icing and follow with a roll in the coconut.
  • These delicious lamingtons are so moreish and won’t last long in any house!
