With Anzac Day coming up, what better treat to serve up on this special day than Anzac Oatmeal Slices. This is a twist to the traditional Anzac biscuits but is equally delicious and packed full of healthy oats. It has been said that Anzac biscuits were sent by the families to soldiers abroad because these biscuits kept well during naval transportation. Today it is the perfect everyday treat -Anzac Day or not.

Makes: 8 servings
Ingredients
1 cup plain flour
1 1/2 cup rolled oats
2/3 cup caster sugar
2/3 cup desiccated coconut
2 tbsp cold water
125g butter
2 tbsp golden syrup
1/2 tsp bicarbonate soda
Method
Preheat oven to 160°C, grease and line a loaf pan.
In a large bowl combine flour and oats.
Add in the sugar and coconut.
Using a large metal spoon, stir to combine the mixture. Make a well in the centre.
Place butter, syrup, 2 tbsp cold water in a saucepan over low heat. cook, stirring until the butter has melted and remove from heat.
Stir in the bicarbonate soda.
Stir the butter mixture into the oat and flour and combine well.
Press the mixture into the loaf pan.
Bake for 25-30 minutes or until golden.
Allow the slice to cool and cut into slices to serve.
