Appetizer Of Apple Blue Cheese And Pecans On Endive Leaves
Most apple recipes are sweet ones, however I make several entres/snacks with apples and these are savoury rather than sweet.
This is one of those - crispy apples combined with blue cheese - a heavenly combination, and served on an endive leaf to look very professional.
You can substitute baby Cos lettuce however the flavour of endive is better complimented with these ingredients.

Makes: 2 -3 servings
Ingredients
1 small tart apple (Pink Lady)

¼ cup celery, finely chopped
1 - 1½ tbsp mayonnaise
2 tsp lemon juice
7 - 10 Endive leaves (or baby Cos)
¼ cup Pecans (or hazelnuts), toasted and coarsley chopped
Method
Core the apple -if you have one of these, do it with this.
These are very handy and a similar one can be bought at Ikea
Chop the apple into small pieces.
Combine the apple, crumble the blue cheese into it, add the celery, mayonnaise and lemon juice.
Stir gently to combine and season with salt if required -I did not as the blue cheese has enough salt in it.
Place the endive leaves on a serving plate.
Spoon a small amount of the salad mixture onto each leaf.
Sprinkle with the Pecan nuts, and serve.
