Apple Almond Bircher Muesli
Something about eating bircher muesli for breakfast makes us feel like we're on holiday away somewhere nice and hot...
Here we've made a high-fibre, vegan and low-sugar version using shredded apple, flaxseed and almonds which will be sure to keep you feeling full until lunch.
Preparation Time: 5 minutes (plus overnight soak)
Serves: 1
Ingredients
1/2 cupĀ (50g) oats
1 small apple
1 tablespoon ground flaxseed (linseed)
2 tablespoons slivered almonds
1 cup (250ml) almond milk
Method
Throw oats, flaxseed and almonds together in a bowl.
Grate the apple and transfer to oat mixture.
Pour over almond milk and cover and refrigerate overnight. Mix well in the morning and top with a sprinkle of ground cinnamon if desired.
