Apple and Cinnamon Pikelets

A fluffy and light pikelet or pancake packed with delicious, healthy grated apple and a tasty cinnamon twist that is perfect for brunch or a lunch time treat.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

1 1/2 cups milk
1 egg
2 teaspoons vanilla extract
2 cups self-raising flour
1/4 teaspoon bicarbonate of soda
1/3 cup caster sugar
2 teaspoons ground cinnamon
1 apple, grated
2 tablespoons brown sugar

In a mixing bowl, whisk together the egg, milk, and vanilla extract.

In a second bowl, combine the flour, bicarb soda, and caster sugar.

Add the milk mixture gradually to the dry ingredients and whisk until a smooth batter forms.

Add the brown sugar and cinnamon, then stir through to combine.

Fold in the grated apple.

Heat a frying pan with some oil or butter in it over medium heat.

Spoon 1-2 tablespoons of mixture at a time to form each pikelet. Cook in batches of 2-3 pikelets at a time.

Cook for 2-3 minutes, or until bubbles start to appear on the pikelet surface. Flip the pikelets over and cook on the other side until golden brown.

Place the prepared pikelets on a plate layered with a napkin or paper towel and cover with silver foil to keep them warm while making further batches of pikelets.
